vegetarian tortilla soup

you will need:

2 tbs. vegetable oil ( i used olive oil)
1 lb. of stir fry veggies of your choice ( i used *fresh* bell peppers,orange peppers,zucchini,and onion)
2 cloves of minced garlic
3 tbs. of ground cumin
1 (28 oz.) can crushed tomatoes
4 (14 oz) can vegetable broth
salt and pepper to taste
1 (11 oz) can of whole kernel corn
12 oz. of tortilla chips
1 c. shredded cheddar cheese
1 avocado- peeled, pitted and diced

directions:

heat the oil in a large pot over medium heat. stir in the veggies, garlic, cumin and cook for 5 mins. or until veggies are tender. mix in the tomatoes and chile peppers. pour in the broth, and season with salt and pepper. bring to a boil, reduce heat to low, and simmer for 30 mins. 
mix corn into the soup, and continue cooking 5 minutes. 


serve in bowls over equal amounts of tortilla chips. top with cheese and avocado and enjoy...
