potato soup

tonight i made potato soup from scratch. it was pretty good, not as thick as i'd like it, but i will tweak the recipe next time. here is what i did....

4 cups of chicken broth
4 cups of peeled and cubed potatoes
1/4 cup of minced onion
1/2 teaspoon of seasoned salt
1/4 teaspoon freshly ground black pepper
1/4 teaspoon of ground red pepper
dash of garlic powder
1 package (8 oz)  of cream cheese cut into chunks
3 pieces of bacon
shredded cheese to top

combine the broth, potatoes, onion and seasonings. bring to a boil. mash up a few of the potatoes inside the mixture to release it's startches. while the mixture is coming to a boil, bake 3 pieces of bacon on a crumpled up sheet of foil on a baking sheet. i baked for 15 mins. you want the bacon to be extra crunchy. dab with a paper towel to absorb extra greese. once the potatoes are soft, add the cream cheese. reduce to low heat and stir until cream cheese is melted. remove from heat and serve with shredded cheese and bacon. enjoy....
