Cap'n Crunch Chicken with fresh green beans and mashed baby new potatoes

This is sooooo good. I love it. This is what you will need:

2 1/2 c of Cap'n Crunch Cereal
1 c of Cornflakes (plain)
1 egg
1/2 c of milk
1/2 c of flour
1/2 tsp of black pepper
1 tsp of garlic powder
1 tsp of onion powder
2 lbs. of boneless,skinless, chicken breast
1/4 lb. fresh green beans
1/2 lb. baby new potatoes

Preheat the oven to 350.You will then need to crush and smash your Cap'n Crunch and your Corn Flakes together. I used a gallon sized Ziplock bag and a rolling pin, but you could use your hands, a canned food item or your head... haha Anyway, grind up the cereal. captain crunch and corn flakes, crushed.

Stir together the onion powder, garlic powder and black pepper and then combine with the flour. Put it aside. In a different bowl, beat your egg and milk together. Set aside. You should wash and dry your chicken. No one wants Salmonella!

Your assembly line should look something like this...Chicken, Flour Mixture, Egg/Milk Mixture and Cereal Mixture
Place the chicken on a non-stick foil lined cookie sheet. Bake for 1 hr. You can also fry, but you don't want your hand looking like mine do you?? Plus, baking is so much healthier!

While the chicken is cooking, you can rinse your green beans. You need to snap them in half and snap off each in. Put in a pot of water with about a Tbs. of butter (optional). I also add fresh cut garlic. (optional)

Cover the beans and set to low heat. Next, you need to wash your potatoes.


Cut them into wedge sized pieces.

Put them in a pot of water with fresh garlic, and whatever else you like. I added rosemary and parsley as well. Bring the potatoes to a boil, stirring occasionally.


Once they were tender, I drained them and put them in a mixing bowl. I added some butter to taste, about a 1/4 c of milk and some more garlic powder and then I used my electric mixer to mash them/mix it all together.

I covered them while we waited for the chicken to finish. Then, strain the green beans and put them in something pretty. haha. Here is the finished product!the final product.
